Retail fair|U.S. Food Safety and Retail Trends 2023: Grocery Retail Technology

400,000 U.S. adults own smart speakers, and voice shopping is worth about $4 billion in the U.S.

How can grocers evolve their smart speaker strategies to fill consumers' shopping carts, utilizing more sophisticated technology that will allow them to outperform smart speakers from Amazon Fresh and Whole Foods?

In our last Trend Forecast, we talked about the meta-universe and the need for grocery retailers to consider related development plans - but honestly, that's still a few years away. In the meantime, a lot can and should be done today.

According to retail fair, Walmart announced last month that within three years, the unit cost of moving goods will drop by 20% as warehouse robots play a bigger role in delivering orders to shoppers.

That's certainly a positive move, but it's time to move more technology to the front of the store. For example, grocery stores could use 3D printers to customize cakes and pizzas to shoppers' tastes and nutritional needs in order to meet taste diversity and nutritional needs, avoid allergens and reduce the amount of food wasted.

According to retail fair, artificial intelligence devices can be used for customer service, recipes, wine pairings, ingredient recommendations, food allergen information and online ordering. The drive-thru ordering and counter service is now being used at fast food chains including McDonald's, Chipotle, Taco Bell, Popeyes, Wingstop, and Delta Pizza; burger machine Flippy is flipping burgers at White Castle; and salad maker Sally has been installed in supermarkets across the country... ...

Baum + Whiteman's 2023 Foodservice Trends report says artificial intelligence is guiding robots for pizzas, french fries, tortilla chips, pasta, and beverage dispensers through production and can tell restaurant managers when and how much to prep, when to cook, when to replenish ingredients, and when to shift labor to different stations.

Why aren't supermarkets using these tools too? Artificial intelligence and machine learning can outperform humans in language understanding, reading comprehension and image recognition.

Birdzi's AI can understand a shopper's profile and generate personalized promotions and discounts.Instacart will integrate ChatGPT into the search function of its website and app later this year, allowing shoppers to ask a wider range of questions-even about ingredients and nutritional information-and shoppers will get the answers they want, rather than shoppers having to click to read a list of search responses.

Nestlé is using AI to analyze trends, ingredients, flavors, and health benefits across social media, online publications, and other web resources to spot new trends in product ideas. One example they shared was how they are using AI to predict the sensory characteristics of coffee innovations - what they call "electronic tongues". Together with the Crohn's & Colitis Foundation, they have developed a free web-based tool to help consumers create personalized, gut-friendly recipes based on consumer profiles.

Our supermarket retail dietitians can use artificial intelligence to generate customized meal plans based on dietary needs and restrictions, food allergies, budgets and drug interactions.

According to retail fair, Walmart, The Fresh Market, and ALDI recently updated their digital storefronts - to personalize, enhance, and build stronger relationships with shoppers - with product recommendations, seasonal storefronts, themed product bundles, shoppable recipes, and recorded how-to's and live videos to sell products designed specifically for shoppers.ALDI even added an ALDI has even added an "Explore" button to fulfill shoppers' needs for highly sought-after, limited-time Aldi Finds products.
